The source
of the distillate.
In keeping with this philosophy, Michel Couvreur chose to undertake its own distillation. Established in Bouze-lès-Beaune since 2022, the distillery extends a vision that has guided the house from the beginning, where every stage remains dedicated to the integrity of the product.
The barley used comes from local agriculture and is malted in Dijon at the Malterie de Bourgogne, with which we are associated, ensuring complete control over the raw material.
Fermentations are carried out in wooden vats, deliberately long and relying on natural yeasts, in order to develop a rich and nuanced aromatic profile from the outset.
They are followed by traditional double distillation over direct flame, conducted with precision to preserve the finesse and complexity of the aromas.
The Promise
of Time.
Nothing here is standardized. Every step is designed to produce a spirit of great finesse, intended for long maturation in cask. The objective is not technical performance, but accuracy: to create a distillate capable of evolving, transforming, and integrating fully with the work of the wood.
This approach naturally continues the historic work of the house, which still relies on the selection of distillates in Scotland, while the distillery’s own production now enriches this balance.
The first whiskies produced from our own distillation will emerge when the time is right. While 2032 appears on the horizon, only time itself will decide of the proper moment.
