The story of Michel Couvreur.

The story of Michel Couvreur is one of a free spirit and a strong intuition: that whisky could be conceived differently.


Born in Flanders and adopted by Burgundy, he trained from the 1950s onward in the trade and maturation of Burgundy’s great wines. In this world, he developed a singular approach in which time and the cask played a central role.


In the 1960s, he settled in Scotland as a natural extension of his activity, bringing with him the standards and discipline of the great wine tradition. There, he discovered whisky — and sensed, beyond established traditions, another possible path

One conviction became clear:
whisky is born in the still,
but it is built in the cask.

Michel couvreur

At the end of the 1970s, he gave shape to this vision. He selected distillates in Scotland, then transported them to Burgundy to mature in his cellars in Bouze-lès-Beaune.

This founding choice created an unprecedented dialogue between two cultures: the Scottish tradition of malt whisky and the Burgundian art of maturation. Located midway between Andalusia and Scotland, Bouze-lès-Beaune emerged as a geographical advantage for the tradition of Scotch whisky aged in Sherry casks.

Thus, was born a singular approach: that of a whisky matured by an “éleveur”, where time, wood, and place take precedence over pure technique.
